I have an Iraqi friend who makes the best briyani. I would really like to learn to make it myself, but when I tried using a packaged mix, it was way too spicy hot. Thanks for sharing these recipes! I look forward to trying them.

Thank you Julia!! taste the masala water before adding rice, it should be little spicy and salty to compensate for the rice! so adjust masalas and salt by that time 🙂

Great post! I love biryani. The first time I made it was for my birthday earlier this year – we had an “around the world” dinner party and I chose India. I used brown rice, however, and it ended up being undercooked. I think it just needed more cooking time to absorb the liquid. Going forward I’ll be sure to use regular basmati rice as per the traditional recipe to make sure it turns out properly! The flavours were amazing though and I will make it again.
